Why cold press

There are two ways to get juice out of a vegetable, and the difference is the whole reason this store exists.

Fast juicers shred

A centrifugal juicer spins a blade at 10,000–15,000 RPM against a mesh basket. It's quick, it's loud, and it works. It also whips air into the juice and generates heat through friction. That's why juice from a fast juicer arrives with a two-inch head of foam and separates into layers within about an hour.

Cold presses crush

A masticating press turns a single auger slowly — ours at high torque and low speed — and squeezes produce against a screen. No blade, barely any air, very little heat.

Three things follow from that:

  • Drier pulp. Squeeze the pulp from a cold press in your hand and almost nothing comes out. That's juice you paid for and would otherwise throw away.
  • Less foam. More juice in the glass and less air, which is mostly an aesthetic thing but you will notice it immediately.
  • It keeps. Less oxygen and less heat means cold-press juice holds up in a sealed bottle for roughly 72 hours instead of separating by lunchtime. This is the difference between juicing every morning and batching on Sunday — and batching is the only version of this habit that survives a busy week.

What cold press is not

It is not faster. It is not less work. The chute is narrower, so you chop more, and the press runs slower, so you wait longer. Anyone selling you a cold press as the convenient option is selling you something.

What it is: better juice, more of it per pound of produce, and juice that lasts long enough to make the routine realistic.

Leafy greens are the real test

Kale, spinach, chard, wheatgrass and parsley are where fast juicers fail — the blade throws greens against the wall of the basket and most of the liquid ends up in the pulp bin. A slow auger grinds them. If your reason for juicing is greens rather than fruit, this is not a preference, it's the requirement.
